Pico de Gallo
Pico De Gallo is the traditional salad accompaniment served with Beef Fajitas.
The sweet and sharp tanginess of the salad works so well with the homemade Guacamole, sour cream and Beef Faijitas. I love to eat these in homemade flatbread.
Super simple, but extremely tasty.
for the Pico de Gallo [serves 2] :
2 large tomatoes, deseeded and diced fine
2 cloves of garlic, pasted
2 red Thai chilli, deseeded and diced fine
1 large shallot, finely diced
1/2 cucumber, skin and seeds removed and finely diced
juice of half a lime
1 tbsp of white wine vinegar
salt and pepper to season
2 tsp fresh coriander, chopped
for the Pico de Gallo :
1) Add all the vegetables in a bowl, and mix well to combine.
2) Add the white wine vinegar, juice of half a lime and season well.
3) Add the chopped coriander.
4) Cover with cling film and leave in the fridge until ready to serve.
Dice the cucumber
Dice the deseeded tomatoes
Dice the deseeded chillies
Dice the Shallot
Paste the garlic
Add the lime
Combine the ingredients in a bowl, season well
Add the white wine vinegar
