A lovely zingy, spicy tomato salsa. Tastes great as a side to most summery dishes!
Originally served with the Lamb Koftas.
for the tomato salsa [serves 2] :
1 large tomato finely diced
½ red onion finely diced
1 red thai chilli finely diced
handful of parsley finely diced
juice of 1/4 lemon
1 tbsp olive oil
salt and pepper to taste
for the tomato salsa :
1) Mix all the ingredients into a small bowl.
2) Drizzle over the lemon juice, seasoning and olive oil.
3) Gently stir with a spoon, cling film and chill in the fridge.
